Chicken Fried Mullet with Sriracha Tahini Sauce



Mullet scares a lot of people (they think it will taste "fishy"), but it's actually mild tasting white meat fish with a great flaky texture. If you can get it, it's worth giving it a try.

Ingredients - Sriracha Tahini Sauce

  • 1/2 cup tahini
  • 1/4 cup hot water
  • 1/4 cup fresh squeezed lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons sriracha sauce 
Ingredients - Chicken Fried Mullet
  • 4 mullet fillets
  • 3/4 Cup All Purpose Flour
  • 2 eggs, beaten
  • 1/3 cup vegetable oil
  • Salt and Pepper
  • Cayenne pepper
  • 2 lemons cut into wedges. 

Instructions - Sriracha Tahini Sauce
  1. Mix tahini with hot water until consistent. 
  2. Add lemon juice, olive oil, and sriracha. Mix well. Add salt and pepper to taste. 
Instructions - Chicken Fried Mullet
  1. Season both sides of fish fillets with salt, pepper, and cayenne (to taste). 
  2. Dredge seasoned fish fillets in flour. 
  3. Dip fish fillets in egg mixture. 
  4. Dredge fish fillets in flour again. 
  5. Heat oil in a skillet over high heat. 
  6. Once oil reaches temperature, add fillets. Cook approximately 3-4 minutes per side until golden brown. 
  7. Serve with Sriracha Tzatziki Sauce and lemon wedges. 




Cuban Grilled Pampano




INGREDIENTS:
  • Two 6 ounce Pampano Filets
  • Juice From 1 Lime
  • Juice from 1 Orange
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 table spoon butter
  • Cilantro for garnish
INSTRUCTIONS:
  1. Season fish with salt and pepper. Drizzle with olive oil. 
  2. Grill fish (skin side up first) for 3 minutes. Flip to skin side down, and grill another 3 minutes.
  3. Combine orange and lime juice, cayenne pepper and cumin in small bowl. 
  4. Spoon juice mixture over fish. 
  5. Top each filet with 1/2 table spoon butter. 
  6. Garnish with cilantro
